Yaki Sake

can I cook sukiyaki without japanese rice wine?

ingredients:
► * 1 pound thinly sliced beef *
► * A handful of shirataki noodles (made from yam cakes) or cellophane noodles
► * 7-8 shiitake mushrooms
* 1 block enoki mushrooms
* 1 medium negi
► * 1/2 Chinese cabbage
► * 1 yaki-dofu (grilled tofu)
* For sukiyaki sauce:
► * 1/3 cup soy sauce /
3 tbsps sake (Japanese rice wine) /
►5 tbsps sugar /
►3/4 cup water
► * For dipping: 4 eggs

the one with "►" are the only ingredients that i can buy here in a near supermarket.

could you suggest any substitute for
* 1 block enoki mushrooms
* 1 medium negi (what is a negi anyway?)

You can use regular cooking wine. It wont affect the tast too much.

Negi are green onions (scallions)

Suki means like (as in 'I like chocolates')
Yaki means to roast (in this meaning to cook)

So sukiyaki is to 'cook as you like'. So dont worry, put whatever mushroom you want and enjoy!
